Even though my thighs were on fire last night from the damn squats that Amanda made me do in the big kid weights area of the gym, I wanted my favorite comfort food for dinner.
Nachos.
I'm drooling right now just thinking of them.
There is a place near me that makes their nachos like this: a bag of Nacho Cheese Doritos, a few ladles of refried beans, salsa, sour cream, black olives, chopped tomatoes, melted cheese sauce. These are not the nachos I am looking for.
I like my own and I pretend that they are healthy. [I also make them GERD-friendly so they're milder than you might like but it's easy enough to boost the heat with my old friend the fresh or pickled jalapeno, oh I miss you so.]
Nachos de Blaugra
Organic Blue Corn tortilla chips (I just tried some Late July brand and they were delicious)
A handful of mild cheddar cheese
Salsa, either green or red (I love Green Mountain brand, or Trader Joe's Salsa Verde)
1/2 small container of fat free plain Oikos (John Stamos') Greek yogurt
1 Wholly Guacamole 100-calorie pack
Scallions, chopped
Fresh cilantro, a handful, chopped
Put chips on a microwave-safe plate and sprinkle with cheese and scallions. Heat for 1 minute. Mix yogurt and salsa in equal portions in a little bowl, add cilantro.
Dip the salty crunchy cheesy chips into the dips.
I know you might say "add some beans!" and I could add beans to the mix but I don't crave beans.
I don't feel guilty or gross after eating nachos, and it's a little fiesta in my mouth.
Yum! It's funny, I made nachos for lunch on Monday and it was the first time in years. I, too, had a big craving!
I didn't have beans but I was craving them so they were subpar nachos but I did make homemade salsa. And sour cream is a must for nachos! My mom had given me a can of sliced black olives with jalapenos she bought buy accident and they were awesome on the nachos.
Husband had off and both kids were at school (they only overlap by an hour and a half until the little one starts full day kindergarten next year) and we sat around eating nachos and watching Frasier. It seemed decadent.
Behold the power of nachos.
